RECIPES FOR THE WEEK

CHICKEN CORDON BLEU MEATBALLS – For your meatballs, mix ground chicken or ground turkey (I am using ground turkey because it’s on sale this week), bread crumbs, grated parm cheese, an egg and salt, pepper, garlic powder, onion powder, Italian seasoning mix and create balls, and then flatten out like pancakes.Take Swiss cheese and slices of ham and cut into pieces that will fit in the meatball.Take a piece of the cheese, and then ham and lay on the chicken patty and then seal the meatball around the ham and cheese.Do this with all your meatballs and then in a bowl mix some panko/Italian flavored breadcrumbs (I use a mix of both), pepper, grated parm cheese.In a separate bowl make an egg wash (egg and water), dip your meatballs in egg wash then breadcrumb mixture and fry in canola or vegetable oil, Cook on all sides then transfer to a paper towel plate and let sit.For you meatball dipping sauce: In a pan, melt butter and add flour until smooth.Add in Dijon mustard, crushed chicken bouillon cube and Worcestershire sauce, pepper, onion and garlic powder.As it starts to thicken add in some white wine and parmesan cheese and stir until smooth and cheese is melted.Keep tasting until you like.Sprinkle your balls and cheese with parsley and serve at the game!

SUPER EASY GARLIC BUTTER PORK CHOPS AND ROASTED PARM BROCOLI – Season your chops with salt and pepper.Heat your skillet (medium-high for a good sear) and add in some oil, butter and thyme.Sear your chops on each side until golden brown and then add some minced garlic and continue to cook your pork until done.For your broccoli: Cut your broccoli up and in a bowl toss them with olive oil, salt, pepper and garlic powder.Cook for 25 minutes (425) or until tender.Remove from oven and in same bowl, mix some lemon juice, lemon zest, olive oil and parmesan cheese and toss.Garnish your pork with some parm cheese too and serve with lemon wedges!

TAMALE PIE – Heat your oven to 400 degrees, in a large oven safe skillet spray with cooking spray.In a bowl whisk Jiffy Corn muffin mix with an egg, 1/2 cup of sour cream, and a can of creamed corn add in some salt and pepper.Put it in your skillet and bake for about 20 minutes. Set aside and cool.In a large skillet, heat some oil with chopped onion, cumin, chili powder, salt and pepper cook until onions are soft and then add in some minced garlic and then some ground sirloin and cook through.If you like it spicier then add some cayenne pepper or sriracha for the extra spice. Drain the fat, poke holes in the corn bread with a fork then pour a small can of enchilada sauce on top and then add your beef mixture and top with Mexican cheese.Cover with foil, bake for about 20 more minutes and then take the cover off and cook until cheese turns golden brown.I add some southwest tortilla strips to add some crunch and some sour cream.

Mexican Spaghetti Squash – I might have done this recipe before but I just love it and it’s so yummy!Poke your spaghetti squash the long way around with a fork and put in the microwave for 5 minutes to soften it.Then cut it in half and take the seeds out.I rub the inside with olive oil and season with crazy salt and bake in the oven for minutes on 350.In a pan, cook up some minced onions, minced peppers, and garlic and then add in some ground beef.Season with salt, pepper, cumin, chili powder, cayenne pepper, onion and garlic powder (or your favorite taco seasoning).Once everything is cooked through, drain and then add some Mitchell’s Fresh (I like the medium), and some chopped fresh cilantro and a can of drained, washed black beans.When your spaghetti squash is soft, scrape up the squash in the shell to form your “spaghetti” and then put your meat mix in the squash shell on top of spaghetti, bake for 20 minutes and then top with Mexican shredded cheese and bake until cheese is bubbly and golden.Garnish with some more cilantro and serve with avocados and sour cream.

Eggplant Parmesan Stacks– I could eat this every day!Eggplant Parmesan is my all-time favorite meal so we have it often.Heat your oven to 400.Slice your eggplant into round slices and salt each side and let sit on paper towels for at least 20 minutes to get the water out of them.In a bowl, mix a couple of eggs with a bit of water for your egg wash.Put a plate down with flour seasoned with Italian seasoning and grated parm cheese, and a plate with Italian style bread crumbs.Put some oil in a large skillet on the stove and then dip your eggplant into flour, egg wash then bread crumbs and fry.Each side should be cooked for about 5 min.Once done put on a paper towel lined plate to drain oil and to cool.Do this with all your eggplant.In a bowl, mix ricotta cheese with grated Parmesan and Romano cheese and garlic powder, salt and pepper.Slice up some roma tomatoes and chop some basil.On a cookie sheet, put one eggplant circle on the bottom, put a scoop of ricotta mixture, a slice of tomato, some chopped basil and then put another slice eggplant, ricotta, tomato, basil, another slice of eggplant then top with a slice of mozzarella slice.Do this with each one and then bake in the oven for about 20 minutes.When I serve the stacks I put down some of my favorite sauce on the bottom of the plate and then put a stack on it.(You can also serve with pasta on the side and some garlic bread.)
