RECIPES FOR THE WEEK

PINEAPPLE GLAZED SALMON WITH PINEAPPLE SALSA – In a bowl combine a can of pineapple tidbits (with the juice), soy sauce, minced garlic, cayenne pepper and put in your salmon to marinade. Let sit for at least a couple hours or until the next day.When you are ready to cook your salmon, take your marinade and put in a pan and cook on the stove top.Cook your salmon either on sprayed foil on the grill, or on a baking sheet, brush your cooked glaze on your salmon several times while cooking. For your pineapple salsa, mix another can of pineapple tidbits (no juice), avocado, diced jalapeno, red onion, cilantro, and salt and squeeze lime juice over the top and keep cold until ready to serve with your salmon.

GARLIC PARMESAN CHICKEN LEGS AND EGGPLANT FRIES – Season your chicken with salt and pepper, garlic powder, make sure your grill is oiled and hot but not crazy hot (you don’t want them to burn) and cook on the grill for about 30 minutes rotating a lot so it doesn’t burn up.Once the chicken is done, in a bowl, combine a stick of butter, melted, minced garlic, minced parsley, shredded parmesan cheese and toss your chicken in it.Eggplant Fries: Cut your eggplant into fries.Whisk eggs in a bowl and set aside.In another bowl, put grated parm cheese, Italian seasoning, garlic powder, panko bread crumbs (or almond flour if you are low carbing), salt and pepper.Roll your fries in flour, egg and then in your panko mix.Bake until golden brown, or you can spray with oil and broil, or fry in oil.Serve with a chipotle aioli: Mayonnaise, chopped chives, minced garlic, lime juice, chipotle hot sauce, salt and pepper.

LEMON BUTTER LONDON BROIL AND BROCOLI CHEDDAR SQUARES – London Broil is a cheap steak and very often it’s over cooked but this is a good recipe and the steak tastes great if you let it marinade for at least 24 hours.Mix olive oil, lemon juice, brown sugar, worcestshire and minced garlic.Rub your London broil with salt, pepper and then your oil mixture and keep in the fridge at least overnight. Before cooking take it out and don’t cook until room temperature.Either broil or grill only for a few minutes on each side to keep it at medium rare. For your lemon sauce mix soft butter, thyme, soy sauce, honey, lemon zest, lemon juice, red pepper flakes and parsley until smooth. Once your steak is done let put your butter on top of it to melt and let it rest for a few before you cut in.You can serve more of the butter on the side. For your broccoli cheddar squares: preheat your oven to 350.You will want to blanch your broccoli first before baking.In a bowl whisk a cup of flour, salt and a teaspoon of baking powder.In a small bowl whisk 3 eggs and a cup of milk.Combine the two mixtures and add in cheddar cheese (I use 2 bags of shredded cheddar) and add in your blanched broccoli. In a casserole dish, coat with butter and add your broccoli mixture and bake for 45 minutes or until cheese is golden.

CHICKEN WITH JALAPENO CHEESE SAUCE OVER SALSA CAULIFLOWER RICE – (This is my go to meal when I want something tasty and so easy) Mix cumin, chili powder, salt, pepper, and season your chicken breasts generously and cook on a skillet,Remove your chicken when cooked and set aside.In the same pan, add some oil, chopped onions and jalapenos, garlic, cream cheese, and cook until cream cheese is melted and then add some shredded white cheddar cheese. Once it’s a sauce add in your sliced chicken.Now you can make homemade cauliflower rice or just buy the frozen.My favorite and easy go to is the frozen cauliflower medley from Market Basket because it’s tasty and cheap!Either way, add some Mitchell’s Fresh Salsa, mix and then pile your chicken and extra cheese sauce from skillet on top!Serve with some tortilla chips!

SWEET AND SOUR CHICKEN AND VEGETABLES – Cut your chicken breasts into chunks and coat with cornstarch.Cook in oil and then remove and set aside.In same skillet, add some more oil, large chopped red bell pepper, chopped broccoli, snow peas and large chopped onion.For your sweet and sour sauce: Heat in a sauce pan, water, rice vinegar, light brown sugar, ketchup and soy sauce.In a bowl, combine a mixture of cornstarch and cold water.Use this to thicken your sweet and sour sauce.Once your veggies are done, add your cooked chicken chunks and coat with the sweet and sour sauce.You can serve with rice, cauliflower rice or just eat as is.
