RECIPES FOR THE WEEK

LEMONY BROCCOLI CHICKEN AND COUSCOUS – Cut your boneless chicken breast into strips and season with salt and pepper.In a bowl mix flour (or almond flour for low carb version), garlic powder, onion powder and paprika.In another bowl, whisk an egg and lemon juice.Dip chicken in your egg mix, then flour and cook your chicken in a skillet with butter.Once it’s all doen, set aside, and in same pan, add a can of chicken broth, lemon juice, salt and pepper and lemon zest and boil add in your chopped broccoli and cook until soft.In another pan while cooking your broccoli make your box of couscous (I like the parmesan flavor, but pick your favorite).Once done put your chicken, broccoli and sauce on top and sprinkle with fresh shaved parm cheese.

CHICKEN THIGHS AND GARLIC BUTTER ASPARAGUS ORZO – Season your chicken with garlic and onion powder, salt and pepper and chili powder.Cook in a hot skillet in olive oil and sear for about 5 minutes on each side.Once chicken is cooked, keep chicken in the skillet and add in butter, garlic, chicken broth and some honey and scrape up all the bits in the pan to create a sauce. Once done remove your chicken and sauce. For your asparagus: Prepare your orzo and when almost done, add your chopped asparagus (cut like 2-3 inches). In your skillet, add butter and garlic and cook until garlic soft, then stir in your prepared orzo, asparagus mixture and add grated parmesan cheese, milk, parsley, salt and pepper.

STEAK TIPS WITH GARLIC BUTTER MUSHROOMS – For your steak tips, marinade a day a head of time and make sure you pull them out of fridge to get them to room temp before you grill them.Marinade: Soy sauce, olive oil, lemon juice, worcestshire sauce, garlic and onion powder, Italian seasoning, salt and pepper (I also add some hot sauce to my tips, but not for Jeff and the kids). Garlic Butter Mushrooms: In a bowl whisk butter, garlic, thyme, balsamic vinegar.Put whole mushrooms in a bowl and toss to coat with your butter mixture and season with salt and pepper.Layer on a baking sheet, cook in the oven for 20 minutes at 375 degrees.

CILANTRO LIME TUNA STEAKS AND BEAN AND CORN SALAD – Marinade your tuna steaks in a mix of olive oil, old bay seasoning, 2 limes juiced, minced garlic, paprika, cumin, chopped fresh cilantro. (I will let it sit in the marinade in the fridge for a day before I cook on the grill.) If you like a medium rare, tuna, sear it on the very hot grill on each side for only a couple minutes.Bean and Corn Salad: In a bowl, mix 2 cans of black beans (drained and rinsed), corn (charred on the grill and cut off the cob), chopped red onion, chopped red bell pepper, avocado peeled, pitted and diced, 2 jalapenos chopped (seedsremoved), Chopped fresh cilantro, olive oil, lime juice, honey, chili powder, cumin, salt and pepper.

JULY 4TH DESSERT FOR THE KIDS TO MAKE! I found the recipe online and it looks like a hit for the BBQ!

No Bake Summer Berry Lasagna

Ingredients

For Whipped Cream:

·1 and 2/3 cup heavy cream-chilled

·about 1/3 cup powdered sugar (to taste)

·1 teaspoon vanilla

Red Velvet Crust:

·3 cups graham cracker crumbs

·¼ cup strawberry jam

·½ cup+ 2 tablespoons unsalted butter-melted

·Red gel food coloring

For Cheesecake Layer:

·½ cup unsalted butter-softened

·8 oz. cream cheese-softened

·1 cup powdered sugar

·1 teaspoon vanilla

·2/3 cup diced fresh strawberries

·1 cup of whipped cream

For Blueberry Jello Salad Layer:

·2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)

·1 and 1/4 cup boiling water

·2 cups blueberry pie filling

·1 cup of canned crushed pineapple-drained from juice (if use pineapple chunks, pulse it in a food processor to get fine crushed pieces)

Topping:

·2 ½ cups whipped cream

·Fresh strawberries halved

·Fresh blueberries

·¼ cup white chocolate chips

Instructions

To make the crust:

1.Combine graham cracker crumbs, strawberry jam, melted butter and red food coloring( drop the color directly in melted butter or jam, it will dissolve better).

2.Mix until evenly moistened. Press the mixture in the bottom of 13 x 9 x 2 inch dish. Place the crust in the freezer to firm.

Filling:

1.First, make the whipped cream. In a bowl beat chilled heavy cream until soft peaks form. Add powdered sugar and vanilla and continue mixing until really STIFF peaks form. Measure out 1 cup of beaten whipped cream for cheesecake layer. Cover remaining whipped cream and reserve for topping.

2.To make cheesecake layer cream together softened cream cheese, powdered sugar, vanilla and softened butter. Mix in 1 cup of whipped cream(do not use soft whipped cream, cheesecake filling have to be thick or it won’t hold dense blueberry jello salad layer on top)

3.Gently fold in diced strawberries and spread over the crust. Place in the fridge to set.

4.To make the blueberry jello salad layer in a large bowl place 6 oz. berry blue Jello gelatin mixture. Pour 1 ¼ cup boiling water and stir for a few minutes until the gelatin dissolved completely. Set aside to cool for 15-20 minutes, then stir in crushed pineapple and blueberry pie filling. Wait until it’s cooled to room temperature and soft set, or place in the fridge to speed the process but stir from time to time.

5.Spread blueberry jello layer over chilled cheesecake layer. Do not pour warm blueberry jello over cheesecake layer, it will melt it.

6.Place in the fridge to chill until jello layer is set completely .

7.Top with remaining whipped cream. Before serving arrange fresh berries on top. Melt white chocolate chips, transfer melted chocolate to a ziplock bag, cut off the corner and drizzle over the top of lasagna.

8.Store in the fridge.
