RECIPES FOR THE WEEK

GRILLED LEMON GARLIC DRUMSTICKS WITH LEMON FETA COUSCOUS – Mix lemon juice and zest, minced garlic, salt, pepper, paprika, dried oregano and olive oil.Pour into a large freezer bag and add chicken and keep in the fridge overnight. For your couscous – I make a whole wheat couscous with some added fresh spinach.Once it’s done, mix in some roasted red pepper, drained and rinsed chickpeas, crumbled feta cheese and then squeeze lemon on all of it and serve with your chicken.(You can also serve this as a cold salad too)

RUEBEN STUFFED PORK TENDERLOINWITH WARM POTATO SALAD – Cut the pork tenderloin down the center (but don’t go all the way through) and open it and thin out with a mallet.Spread some Thousand Island dressing on the pork, put a layer of pastrami, layer of Swiss cheese and sauerkraut and then roll like a jelly roll.Tie up every couple of inches to keep together.Rub the outside of the pork with olive oil.Season with garlic powder, salt, pepper.Bake in a pan at 425 for 35 minutes.Cut strings and serve with the warm potato salad.I like the trio of little potatoes.Boil some water and add little potatoes, cook until soft but not mushy. Cut into quarters or halves whatever your preference is.In a bowl mix some mayonnaise, grated parm cheese, Dijon mustard, cayenne pepper, salt, pepper, paprika, apple cider vinegar and some green onions if you like them.Mix the sauce with your potatoes.

ITALIAN ROAST BEEF AND STUFFED ARTICHOKE HEARTS – Cut the top and bottom of your artichoke and remove the tough outer leaves. Peel away the middle of the artichoke.Scrape the middle of the artichoke to get rid of the fuzz.Sprinkle inside and outside with lemon juice.Steam the artichoke stem side up until it’s tender.While it’s steaming, cook some onions and garlic in butter, add some lemon juice and white wine, add Italian bread crumbs, parsley, salt, pepper, Italian seasoning and fresh grated parm.Take your artichokes out of steamer when soft and fill with your stuffing mix.Cook in the oven for about 20 minutes, add some more parm cheese and cook until browned on top. For your roast beef, mix minced garlic, Italian seasoning, salt and pepper, dried basil, dried oregano, red pepper flakes and rub your beef with oil and then this mix.In a large pan, add some beef broth, Italian salad dressing and a packet of au jus mix and large cut onions (quarters should be good)Put your beef in this and let cook for a couple hours.(Let it sit for 20 minutes or so before cutting in to it.)

GRILLED STEAK AND ASPARAGUS – nothing fancy, grill yourself some steak with your seasoning and grill some asparagus seasoned with olive oil, garlic powder, salt, pepper and sprinkle on some fresh parm.Pair it up with some rice pilaf and voila, easy yummy dinner!

GRILLED HONEY SRIRACHA CHICKEN THIGHS WITH ASIAN CABBAGE SLAW – In a sauce pan , heat up some butter, ginger and garlic, add paprika, cloves, soy sauce, honey, lime juice and sriracha whisk until combined and take off the heat after a few minutes.I separate some of it for extra sauce once it’s cooked...Season the chicken with salt and pepper and put on the grill, when it’s almost done start brushing on your sauce.Add an Asian side to stick with the theme . . .you could fry up some cabbage in some Asian oil, with shaved carrots, green onion, jalapenos (if you like spice), cilantro, a little lime juice, garlic, ginger and soy sauce!(Or buy a bag of trio cabbage slaw and add everything else to it to spruce it up.)
