SOUTHWESTERN EGG ROLLS
3 boneless chicken breast cooked and chopped up into small pieces
2 packages egg roll wraps (found in the produce section) makes 42 rolls
3 frozen packages of spinach (thawed)
1 large bag frozen corn
1 bell red pepper (cut into small pieces)
1/2 bag Mexican cheese
3 cans of black beans (drain)
½ jar jalapenos (or more if you like extra spice)
Chili powder
Cumin
Cayenne pepper
Salt
1 bottle of Ranch Dressing
In large pan cook spinach, red pepper, corn, black beans and jalapenos (add water to keep it from sticking to the bottom of pan). Once red peppers are soft put mixture into a bowl and mix with chicken, some shredded cheese, and seasonings (spice to taste). I use a lot of spices, they taste so good spicy.
Fill the egg roll wraps with mixture, fold and seal and then put in a deep fryer until golden brown.
Dip in ranch dressing!
