Some listeners have been asking me about different recipes I make at home! This one I want to share because I think they came out so delicious! I will say nothing is really exact because I don't measure when I am cooking (that's why I will never be a baker, ha ha). I make everything to taste so have fun and experiment!
Sweet potatoes - sliced thin
Al Fresco brand - Chipotle Chorizo Chicken Sausage (or any type of spicy chicken sausage)
onion - diced
peppers (green, red) - diced
black beans (rinsed and drained)
Mitchell' Medium Salsa
Shredded mexican cheese
cilantro
cayenne pepper
garlic powder
salt, pepper
olive oil
Optional: avocado and sour cream
Coat sliced sweet potatoes in olive oil, salt and pepper. Put on baking sheet and cook for 10-15 minutes on each side on 425 degree oven (or until soft but not mushy).
While those are cooking, in a frying pan, cook onions, peppers, black beans, sausage and season to taste with the cayenne pepper, salt, pepper, garlic powder. Once cooked, you can add to the top of the sweet potato chips, add a bit of cheese and bake until melted.
Before serving add some salsa, cilantro and avocado and sour cream!
