First - let me say that Valerie makes killer soups. I mean - REALLY GOOD. And normally, she doesn't even use recipes to do it. On Saturday, however, she made one that our friend Jolene gave her the recipe for - and IT. WAS. KILLER.
It's called Italian "Peasant Soup" - and it's absolutely delicious! Little bit of a kick to it, but not too much!
Here's the what you need -
2 lbs Italian sweet sausage. (We did 1 lb sweet, 1 lb hot)
2 medium onions , chopped
6 garlic cloves (chopped or - 3 tsp minced garlic)
2 cans cannellini beans
4 cans (14.5 oz) chicken broth
2 cans (14.5 oz) diced tomatoes with garlic and basil-oregano
2 carrots (chopped)
1 tsp dried basil
1 tsp dried oregano
1 bag baby spinach. (or you could use kale)
And here's how to cook it -
Cook sausage till no longer pink. Chop up to desired size (we cut into sm chunks)
Add onions and garlic until tender
stir in beans, carrots, broth, tomatoes, basil and oregano
Cook uncovered for 20 min until carrots almost done.
Add spinach and heat until wilted.
Then have at it.....
